Ingredients

  • 1½ tbsp canola or olive oil
  • 1 package Trader Joe’s fresh mirepoix mix)
  • 1 lb ground lean turkey breast
  • 2 large garlic cloves, minced
  • 3 tsp chili powder
  • 1 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 (15.5 oz) can no‑salt‑added black beans rinsed and drained
  • 1 (14.5 oz) can no‑salt‑added diced tomatoes
  • 1¾ cups low‑sodium chicken broth
  • 1 cup frozen sweet corn kernels
  • 1 (6 oz) can no‑salt‑added tomato paste
  • 1 tbsp worchestershire sauce
  • 2 tsp honey (optional)
  • salt and pepper to taste
  • 4 green onions, sliced (green parts only, for garnish)

Instructions

  1. Heat the oil in a Dutch oven or large pot over medium‑high heat, swirling to coat. Sauté the mirepoix for about 5 minutes, until starting to soften.
  2. Reduce heat to medium. Add the ground turkey, breaking it up with a spoon, and cook for about 5 minutes until no longer pink.
  3. Stir in the garlic, chili powder, black pepper, cumin, and smoked paprika and oregano. Let the spices bloom for a minute.
  4. Add the beans, diced tomatoes, broth, corn, worchestershire sauce, honey (if using), and tomato paste. Stir well to combine.
  5. Bring to a gentle simmer, then reduce heat and cook for 20 minutes until everything is heated through and the flavors become rich, stirring often.
  6. Taste and adjust seasoning as needed. I often add some cayenne or red chili flake for some heat, and typically adjust chili powder, cumin, and other spices little by little until I get it right where I want it. Then, just ladle into bowls and garnish with sliced green onions.
